Are you afraid those vegetables you bought will get wasted? Can’t you figure out how to use them before you are forced to throw them away? Try this simple and quick veggie packed pasta inspired by a recipe from Derek Sarno.
Almost any vegetable goes well with this pasta, so it is a great way to reduce food waste and introduce more veggies into your diet. Add high-protein VEGGOFIX CHICKY Mince into the mix and this becomes a wholesome and satisfying dinner.
Veggie Packed Pasta with Hummus Sauce
recipe for 4 servings
Ingredients
Two VEGGOFIX CHICKY Mince burgers leftover from the day before and half a pack or more of penne pasta.
Leftover veggies: sliced mushrooms, green beans, half a zucchini, 2 small carrots, spring onions and any other vegetable you want to save from becoming food waste like tomatoes, cucumbers, lettuce … Yes! Lettuce.
Sage, basil, tarragon and half an onion that got lost on the bottom of the fridge.
Hummus cheese sauce: 250g leftover hummus, black salt and vegan gouda cheese.
Preparation
Start boiling the water for the pasta. Chop the half onion in small pieces and fry them with the sliced mushrooms in the pan with a glass of water and 2 tbsp oil for the best results. We added salt, dried basil, tarragon, sage to the mushrooms. If you use fresh herbs you can put them in later.
Now you can start chopping carrots, green onions, zucchini and any other vegetable you would like to use. We also chopped lettuce, tomato, and cucumber, but we decided to put those together in a salad with sesame seeds and balsamic vinegar, instead of putting them in the pasta as Derek Sarno does in his video.
We chopped 2 leftover burgers we made from VEGGOFIX CHICKY Mince, because we had them in the fridge anyway and because they are tasty and rich in plant proteins.
We chopped the burgers and veggies in very small pieces, but you are free to cut all the ingredients however you want. Derek Sarno slices his veggies in much larger pieces and puts the lettuce in the pasta. That is great too.
When the pasta water boils, throw in a copious amount of salt and the penne pasta.
As soon as the mushrooms have gotten some color you can start adding the chopped vegetables and the cut pieces of VeggoFix Chicky burgers. Let them cook for about 8 min. During this time the pasta will be done too.
After these 8 minutes you add the sauce ingredients to the veggies: 1 pack of hummus (250 g), 4 slices of vegan gouda cheese and a touch of black salt. It takes a few minutes before the cheese is melted, but you can easily put in a different sauce or even no sauce at all. It all works. We just like cheese sauce.
Stir in the boiled pasta and add some of the cooking water to help everything mix well and that’s it. Serve it with salad to the side if you did not already mix the tomato, cucumber and lettuce into the pasta, of course.
No food wasted and you have a lovely veggie packed pasta dinner for you and your family!
